Blushing Baked Salmon recipe

Ingredients:

6 salmon fillets (about 6 oz. each)
3 tablespoons of lime juice
3 tablespoons of honey 
2 tablespoons of olive oil 
salt and pepper to taste 
6 fresh mint sprigs, for garnish 
3 limes (halved), for garnish    

Directions:

1. Remove the salmon from the refrigerator 15 minutes before baking. This dish can be served either warm or at room temperature.

2. Place the salmon fillets in a glass or ceramic dish to fit, skin side down. Combine the next four ingredients and brush them over the salmon. Refrigerate, covered, for 30 minutes.

3. Meanwhile, preheat the oven to 450 degrees F. Bake the salmon for 15 minutes or until cooked through. (The salmon should flake easily when tested with a fork.) Carefully remove the salmon to six dinner plates and garnish each fillet with a mint sprig on top and a lime half alongside.
