Salmon Croquettes recipe

Ingredients

2 cups of cooked salmon
½ cup of celery or 1 tablespoon of parsley 
2 cups of mashed potatoes 
½ cup of bread crumbs 
2 tablespoons of lemon juice
2 eggs beaten with 2 tablespoons of milk 
salt and pepper

Directions

1. Flake the salmon; mix with the mashed potatoes, half the bread crumbs, and half the egg mixture.

2. Add the celery or parsley, lemon juice, salt, and pepper.

3. Form into balls or cone shapes, dip into the remaining egg mixture and roll in the bread crumbs; allow to dry for 10 or 15 minutes.

4. Pan fry in butter or margarine, or deep fry in hot oil until golden brown.

Serves 4.

 

Beer Batter

Ingredients

1 (12oz) can of beer 1 tablespoon of salt
1 cup of flour 1 tablespoon of paprika

Directions

Mix ingredients together.  If the batter becomes too thick, thin with more beer.

 

Variations

Before breading, season the mixture with white wine, Worcestershire sauce, or paprika.

In place of breading, dip the croquettes in beer batter, drain and fry.
